Chicken Fajita Bowl

Ingredients:

 

Chicken Marinade

   Boneless Chicken Thigh - (1135g)

   Olive Oil - (6g or 1 Tbsp)

   Paprika - (6g or Tsp)

   Cumin- (6g or Tsp)

   Onion Powder - (6g or Tsp)

   Garlic Powder - (6g or Tsp)

   Chilli Powder - (6g or 2 Tsp)

   Salt - (6g or 1 Tsp)

   Lime Juice - (30g or 2 Tbsp)

   Orange Juice - (30g or 2 Tbsp)

 

Rice

   Cooked Rice - (750g)

   Canned Beans - (2 cans/880g)

   Lime Juice - (30g or 2 Tbsp)

 

Potatoes

   Potatoes - (3 Medium)

   Olive Oil - (6g or 1 Tbsp)

   Salt - (6g or 2 Tsp)

   Pepper - (6g or 2 Tsp)

Vegetables

   Peppers - (2 medium/300g)

   Onions - (1 medium/200g)

   Olive Oil - (6g or 1 Tbsp)

Extra

​   Full Fat Cheese - (70g)

   Salsa - (300g)

   Sour Cream - (150g)​​

Chicken

Step 1:

Preheat the oven at high heat (210°C or 420°F).

Step 3:

Add your chicken to the bigger portion of marinade and make sure each part is well coated. For best results, let it rest for (1-2) hours.

Step 6:

When chicken is done cut it into strips and use the remaining marinade to cover. Then put it back in the oven for (5-8) min.

Step 2:

In a bowl add all the ingredients listed under chicken marinade except for the chicken and mix until combined. Then split (1/3) of it in a separate bowl.

Step 4:

Add oil to a sheet-pan and place your pieces of chicken on their flat-side. Roast in oven for (13-15) min.​

Vegetables

Step 1:

While the chicken cooks: peel and cut your potatoes into large cubes.

Step 2:

Mix your potatoes in a large bowl with oil, salt and pepper. Then add them to an air fryer at high heat for (15) min or in the oven with the chicken.

Step 3:

Cut your bell peppers and and onions into thin slices and cook them in oil on a medium heat pan.

Step 4:

Once they develop colour put in (1-2) spoons of water and cover to steam the vegetables for (4-5) min.

Rice

Step 1:

Drain your cans of beans then add them to a bowl of your cooked rice.​

Step 2:

Add lime juice and salt and pepper to your rice.

Plating

Step 1:

Split all your ingredients into 5 equal potions.

Step 3:

Finally add cheese, salsa and sour-cream to finish the plating.

Step 2:

Start by plating your rice, then your potatoes, vegetables and chicken on top.

Tip:

When meal prepping add the sour-cream and salsa after you've reheated the meal.
